Breadfruit Cou-Cou
Submitted by: Site AdministratorA spin on the national dish of Barbados, made with breadfruit instead of cornmeal but just as delicious!
Ingredients:
1 breadfruit, 2 teaspoons or less salt, 1 bunch herbs, 1 pint stock, 2 tablespoons butter, 1 chipped onion
Method:
Cut breadfruit in slices and boil with herbs and onion, in water just covering the fruit. When soft, take from heat and crush with a potato masher, then with a heavy wooden spatula to make smooth adding stock as necessary. Stir in some of the butter and when smooth place in dish and spread with remainder of the butter.
